For starters, don't roll at Clark. In fact, try not to roll at all. If the Clark player walks right up to you and rolls, throw him first (though most Clark players aren't that stupid). A word to the wise: at close range, low B's are useless against throws (throws go right through them), and low A's will only save you sometimes, and usually because the grappler screwed up his timing.
Pull him out of the air with a good early air-defense special or a good low C (Ryo has a good one, Terry's dwn-fwd+C is also good). One of the oldest Clark tricks is doing an early jump D/CD (which tricks you into blocking), then doing a throw as he lands. You should be wise to this trick by now.
Also, don't use laggy moves or combos; if you're going to do a jump-in attack, time it properly or you'll get counter-thrown; if your normal attacks are blocked, don't follow up with a laggy special. Grapplers capitalize on openings like that to counter you with throws. If possible, choose a character with a good, high-priority poke (Terry's far standing B is still pretty OK, even in 2000).
