Eiji is the combo master in KoF 95, and I wouldn't call it junk because of the damage system. It's a tough game. You can't win blindfolded, even if you're a master of the game, because there is a need for timing and distance that later KoFs neglect.
A lot of people who dislike KoF 96 don't like the imbalance in favor of Iori DP+A, DP+A, DP+A, scum gale... tick tick tick damage deaths.
KoF 97 had music, but there weren't team music, and only a few characters had themes, but some stages had good music/sound on their own. Bali is a good example. Also, KoF 97 had a better command set than 98.
People like 98 so much, but I hate the way commands were changed for Shermie, Mary, Chris, etc. Sure, it was more balanced, but why change commands for characters? Think I didn't like them that way? With KoF 98, I stopped playing as Mary. Just wasn't worth my time.
KoF 99 - too different.
KoF 2000 - I'm not sure what's wrong with this. Animation is bad? I don't really see it. Music sucks? Opinions. Hate Hinako and Ramon? Fair enough.
