They style Ken and Ryu use is called Ansatsuken. This basically translates into Assassin's fist, or style. This is a style used for killing. However, Ken and Ryu's master Gouken taught them the style without the killing intent, so thus was a somewhat watered down version of it. When it came time to bring this to America, Capcom USA disliked the whole killing aspect of their style and forced them to be labeled as Shotokan disciples, which is just wrong any way you look at it.
However, like I said before, shoto only really stuck because it was a way to generalize the karate outfit fighters in SF. While Dan DID train under Gouken, he was outcasted when Gouken learned of his revenge against Sagat. Dan developed what he had and turned it into "Saikyo" style, which is in almost every one of his win quotes (such as "buy the 10 volume video tapes of Saikyo" or whatever crap in SFA). Sakura is NOT a shoto, because she doesn't wear a karate uniform (which is the only reason people nowadays use the term), and she isn't exactly a disciple of Ansatsuken either, because she plays too differently to be considered one.
