I checked by a local arcade system/pinball reseller in Richmond, VA called "Games People Play" today and the guy there told me that a used Single Slot MVS Upright System with NO game would cost $1500. Basically, it breaks out like this:
$350 for one-slot kit
$500 for 19 inch monitor
$650 for upright cabinet
The one that he showed me did not work and had been terribly abused. He said that it is very popular unit for the home arcade player. For each addition slot up to 4 he said to add another $150 for each slot but that he recommended a 1 slot configuration because those were the best.
I left the store completely disgusted.
