I’m probably just stupid for thinking this, but are there any AES exclusives or are they all just MVS ports?

Short answer - no.

And, they're not "ports" anyway. MVS and AES are the same, only the cartridges are different dimensions to (originally) prevent MVS being played on a home system. That was the whole point of the AES - it's the arcade at home. Literally.

There aren't any official AES exclusives that aren't also on MVS. There is a handful that have minor rom revisions that are generally only on the AES cart. The differences are only academic.

For unofficial, the original Last Hope is one I can think of that was technically AES-exclusive, but it can be converted to MVS, and no one cares.

You forgot there is a CD version of Last Pope. Think it was the only CD title those Amiga freaks ever did. But I could be wrong. And I don't care either.

Technically I think they farted a few releases out on the Dreamcast too didn't they?

I suppose that's true. My mind was on 'AES but not MVS' but if an NGCD invalidates it, so be it.

Wasn't it more to prevent home carts, which were cheaper, being used in arcades?

Yes, probably originally. Of course, MVS carts became so cheap once they were second hand it kind of became either or.

not always. viewpoint has 2 players mode only in mvs just to say one

My post would like to point out what I have learned after 35 years of neo geo loving: MVS is way superior gear than AES. More games, more options and real arcade feeling played with super ( snk when possible) cabs.

MVS was the gear for truly fortunate people...aes is a more poor counterpart.

It was always to keep home carts from being used in arcades. The MSRP was lower.

The tables have turned but real SNK-Gs know MVS was and still is superior.

They were pretty clever about engineering it too, because there's still no converter to play AES carts on MVS.
