I should say that when I tasted this batch again after sending the jerky out, it was more like medium heat to me. By my standards I might even call it mild, still salty though.

In a few days, I'm making a better, darker batch with as much heat as I can manage and a little less salt, Hotter than the original perfected accidental discovery thing. I did my research, and I am apparently the first person on the web to discover this technique, and it's all mine, muwaha. I'll send some of the new stuff out too, prolly to more people here next time.

Sorry I haven't replied. I received mine on Friday. My wife and I both tried a piece. My impression:

Way too salty. I like salt man but goddamn. A lot of salt.
The heat was fine. Personally for me I would go quite a bit hotter. The jerky had a nice mild mouth heat with no lingering in the throat.

Did you cut the meat against the grain? The jerky was very tough and chewy. Some better trimming of the meat would go a long way.

The spices were nice and besides the salt it had a very pleasant taste.

I freaked my wife out by saying that the jerky was probably the way that a crazy serial killer would dispose of the body. Hopfully that is not true :)

Overall a nice taste man. Thanks for taking the time and money to do this.

cool. That batch was insanely salty, I wasn't paying close enough attention when I mixed the stuff for the brine. The next round of samples is going to be better.

About the chewiness: that's the thing I discovered, the quality that makes it different. It lasts longer than regular jerky and you can pull it apart, almost like string cheese. When made to my recipe (which I didn't go by when I made this batch), I've had people tell me that it could be included in a dinner entrée. I will make the good stuff this week.

I have the habaneros drying now, along with the flavorful jalapenos. I only use good lean flank steak beef, and I cut with the grain.

This batch will have enough samples for 10 people. I'll take pics of the entire process, so as to show you it isn't human flesh I'm using. :)

I would never do anything like that, my devious side has no involvement in my deals/selling/trading or sending anything through the mail. You are in Galfordo, just pm me your addy.

Which leave at least 4 more spots. I can maybe make it 12 if there's enough interest.

This kind of thing can help me develop improvements or new flavors, etc. I love to create things and do all this food alchemy stuff. There's so many possibilities.

ok I finally got the jerky, really spicy and salty but it over all has a good flavor. nice spicy after taste, very very salty.

Okay, so I maned up and tried it and I thought it was pretty great. It is way too salty, I think I could only do a little bit at a time, but the flavor and heat was pretty dang good. I approve

Eating neobuyer's hot, salty beef jerky.

I was out of town when the hot, salty beef jerky arrived, but on Sunday afternoon, I brought in the mail from the previous few days. Luckily the hot, salty beef jerky had not been pillaged from my mailbox from any neighborhood hoodlums looking for a quick snack of hot, salty beef jerky.

Upon opening the box that the hot, salty beef jerky had been mailed in, I was greeted by a small ziploc bag containing precisely two pieces of hot, salty beef jerky. I quickly opened the bag and took a whiff of the hot, salty beef jerky. The aroma was definitely salty, briny, and somewhat spicy, although black pepper might have been a more apt descriptor.

I removed the hot, salty beef jerky from its pouch and fed just a small piece to the dog, still with reservations that now neobuyer had my address, all he had to do was send hot, salty, poisoned beef jerky and wait. Then after my demise, he would be able to utilize my account for all sorts of shenanigans.

With the dog still alive, I ripped a piece of the hot, salty beef jerky in half and stuck it into my cheek. It certainly is salty. While I would say too salty, I love salty, often opting for the salt and vinegar chips or the sea salt and black pepper sunflower seeds. The hot part is a lot more black pepper to me than super hot pepper. I thoroughly enjoyed the hot, salty beef jerky and ate the rest over the course of the next 30 minutes.

cool, i'll give you an honest review dude, i've had my fair share of jerky, mostly while playing CoD and downing mountain dew voltage lol

It is indeed hot and salty. After reading some comments I decided to time how long it took me to chew through a bite, and it was roughly 1:40. But it was a good kind of chew. I dunno if I could have much of this at a time but I agree with Kiel, it grows on you.
