From the top of my head... Minakata Moriya in the first Gekka and Haohmaru in the first SS. But to choose an all-time favorite would require serious contemplation.
The hell stage in SVCC is a top stage for me. I also liked Yuki's stage a lot in LB1, as well as the fire stage in LB2.

Hit detection...It's all about hit detection.
Couldn't find gifs of Duck King from FFS, and the Genroku Era stage from World Heroes Perfect (this game has some outstanding art all around). There are others I like quite a bit, but these are the ones that immediately spring to mind.
