I have the Arcade1Up Star Wars cab, and have been pleased with it. They did a good job duplicating the flight yoke.
The price of Arcade1Up's stuff is really strange. The quality didn't seem worth 400USD at all. Especially to play one non-original game.

Foot print and cost i'd guess. They've sold the casual consumers on the size being playable but not taking up a ton of space in a house or apartment. Playing against another person on the SF2 cab was a bit tight to put it lightly.
I had to fully reassemble the one I bought with wood glue as it was coming apart. Ive also had to replace the monitor which went out, the panel art which wore off and the PCB which overheated for no apparent reason. This was after less the then 3 months and maybe a combined 2 hours of use. After multiple phone calls and speaking with "managers" who accused me of requesting spare parts to sell on eBay, they finally did sort out the issues. They blamed it on me buying a launch model. $299.99 well spent. This company and all of their products are a fucking joke.

Have you ever transported a standard arcade cabinet? They barely make it through most doorways, and they are dangerously heavy even without the CRT.
Scaling down substantially reduces weight. It's more practical to have it smaller.
These don't really appeal to me either, but the market is clearly there.
The real reason that they're not full sized is that it changes the licensing. If you have a full sized cabinet, you basically have to pay the same license as you would to have an arcade machine that you could actually put into an arcade in the wild. It's more expensive for that license, so they didn't get it, and you end up with these turds.
That is 200% bullshit. The license fee goes up when it's set up for pay to play.
