Spike would probably better suited for this, but I've got some stuff that really gave me a lot of insight towards better health.
For exercise, these two are a must:
Men's Health Home Workout Bible
Men's Health Gym Bible
I do workouts from home and at the gym, so they're both musts--great reads though, gives some solid information on muscles and their use, body mechanics, etc... and more exercises than you'll probably ever really need.
For food-related and general health, this helped me to build a proper diet:
Fat That Doesn't Come Back
Indispensable really.
Goes into very precisely detailed descriptions of everything that goes into your body from food & drink (and whether it should or shouldn't), what it does when it gets there, how much of what you really need, etc, etc, etc... it's perhaps even a bit more detailed than it needs to be, but it's an excellent read and as I said, I built my meal plans with the help of this book (got some amazing results in a relatively short amount of time too.)
Don't really need to read this one, but I loved it:
The Okinawa Program
It's a study done by a group of people (doctors, scientists, etc...) about the longest-lived and healthiest (formerly healthiest... the elders got it right but their kids are slacking) people on the planet.
Actually practicing the diet-related advice found in the book may be hard for many people (especially Westerners), but it backs up the claim about the [elder] Okinawan's health and provides with you information you need to be like them--may not be all that practical to most people, but it's a good book to read if you want to put an exemplary perspective on things by checking out how a lot of these people lived their lives.
