Green Goddess chopped salad and Thai broiled shrimps over roasted yams.
First pass at the shrimp and yams before final broil, was a sheet pan roast swimming in lime juice, lime zest, coconut milk, chili crisp, grated ginger + garlic, and scallion whites.

This looks tasty and healthy at the same time. Do the roasted yams stay a bit crispy? I'm not a fan of soggy yams, but it's hard to keep them from going soft sometimes.
The crisp and char is key! After roasting on the middle rack for 40 mins-High broil for the last 10 minutes turns the cubed yams into home-fries, almost. The shrimp blister a bit also, and the excess coconut milk cooks off.
It was my first time making this…really happy w/ how it turned out.
