Thanks, doggy daddy! It gets better once it goes in the bowl…no pics, we were too busy eating, lol.

- mix 1/3 cup parmesan mixed with 12oz ricotta (add salt, pepper, and crushed red pepper to taste).

-shred 1/2 cup fresh basil

A dallop of the cheese mix and a pinch of basil on top=disbelief that a casserole can be turned into a soup, without using a blender.

Green Goddess chopped salad and Thai broiled shrimps over roasted yams.

First pass at the shrimp and yams before final broil, was a sheet pan roast swimming in lime juice, lime zest, coconut milk, chilli crisp, grated ginger + garlic, and scallion whites.

This looks tasty and healthy at the same time. Do the roasted yams stay a bit crispy? I'm not a fan of soggy yams, but it's hard to keep them from going soft sometimes.

The crisp and char is key! After roasting on the middle rack for 40 mins-High broil for the last 10 minutes turns the cubed yams into home-fries, almost. The shrimp blister a bit also, and the excess coconut milk cooks off.

It was my first time making this…really happy w/ how it turned out.

It was my first time making this…really happy w/ how it turned out.

Nice!! I'm going to try broiling yams for a bit at the end to crisp them up next time I cook some up. There are a few types of yams I see at the local markets here, so I might be buying the wrong kind.
