So many cool games it would have been ace to see on the system!
Sonic X looked very interesting, fully 3d sonic game with lot's of speed... but was canned only because sega feared Mario 64 would in the end be the better game and sega didn't want to be seen as taking "2nd place".
Virtua Fighter 3 was definetly finished it was actually ready for the CD pressing plants before it was canned. I heard some magazine journalists in japan got to see the game in action, the game was suppsoidly to have used the incredibly-powerful SGL OS 3.0(saturns final development kit) which could get about 1million polygons on screen by using the sound processor for extra performance. The feature of this programming tool was called AVR processing. For those that do not know about AVR (Audio-Video Rendering), it is a technique that uses the sound chip in the Saturn for processing extra polygons! In fact, any of the processors in the Saturn could potentially be used to work with its two VDPs to increse graphical performance!
Another revolutionary technique was used in Virtua Fighter 3 so that low-detail models were used during fights which were switched to higher-detail models for the winning sequences. The switch between the two different models was hidden by the replay of the previous match, and it was during this replay that the high-detail models were loaded into memory. Because only one character was visible in the winning sequences, the polygons required for a second fighter could be used to produce a more detailed single fighter.
Shenmue on the sega saturn is also another game that used AVR (Audio Video Processing) and it had been pretty much completed, and you can see how good it looked on the Saturn by that video at the end of Shenmue 2 - Just think what VF 3 would have been like...
