I was thinking recently about the best CPS1/2 beat-em-up. I mean, Final FIght is obviously the trend-setter, but overall, i would say there's a three-way tie between D&D:SOM, AVP, and Tenchi Wo Kurau II.

Honorable mention goes to Armored Warriors. Blodia + laser sword + flamethrower + crazy flying spinning blade spider legs = complete domination of the game.

Also, Saturday Night Slam Masters is so fucking fun it hurts. Why oh why did they make the sequel a 2d fighter?

Knights of the Round (CPS1) is awesome; most underrated beat-em-up by far IMO. It's sort of like a D&D prototype with your character being able to guard and gain levels. Plus, the armor changing is too sweet (wish they did this in SOM and ToD).

I have the SNES version, but I've considered picking up the PCB. Is it worth it? I've only seen it in arcades once (and that was almost ten years ago).
