If you're looking for pre-'97 art, there are a few artbooks out there on eBay. You can also find a few of them at jpqueen.com. If you're looking for more recent artbooks, there's SNK Illustrations: All About Characters (volumes 1 and 2). All of the aforementioned artbooks can be found here: http://www.animebooks.com/snk.html
Normally, the more recent SNK artbooks go for about $40-$45, but if you look around hard enough, you can probably find them elsewhere for cheaper. Also, the older artbooks go for around $20-$30.

One of the best books is the samurai shodown art book. It covers all Samurai Games except the Warriors Rage 2 for the PSX. The art is awesome. the quality of the book and the bulk of pages is great too. I paid $30 for it on release when I was in Japan.
