Different Instructions.. ..(BIOS related)

When I got my debug bios the instructions are to "piggyback" the rom chips.
Why on this web site, it says to remove the origional bios and replace with new one?

if you have very good soldering skills, and proper desoldering equipment, remove the old chip. if not, solder a socket on top of the chip and plug the debug bios into that.
