It's easily Vega's Ballad from SF II. It sounds like Carlos Santana had a hand in remixing it.

The Dhalsim "Spicy Curry" Stage remix is pretty cool, and so's Moon's Stage from Magical Drop.

I've got quite a few... somewhere...

There was a lot of good remixes for the Donkey Kong Country series. Makes me hope for remakes with remixed soundtracks some day...

This one has been on there almost since the begining. It was a contra mix that sounded almost exactly like it was ripped from the Nintendo game yet had drums and stuff added on top of it. It played through every song in Contra 1. It's really awesome but I don't know the exact name of it.
