What type of joystick do Red Cabs have?

Definitely NOT the 360 Opticals, believe me. Some might have the Competition ones, but from my experience, most MVS cabs I've seen use Happs Supers. These use the round actuator and as such make it much easier to do rolling motions for fireballs/supers/etc. After using the Happs, Ultimate, Competition, and the Supers, I can honestly say that the Supers are my top pick for thier best joystick.

Original red cabs used something else. Most venders replace their worn sticks with Happs parts.
Happs Supers man, quality stuff all the way!
They're the ones that have the small teardrop for the main part of the stick. You can get a good look at em <a href="http://web.njit.edu/~jal0737/GFX/Neo-Geo/3rd%20Gen%20Sticks.jpg" target="_blank">here</a>, and <a href="http://www.happcontrols.com/joysticks/50608400.htm" target="_blank">here.</a>
They're used on Hot Rod's, X-Arcades, and from what I can tell, they are pretty much the standard on most home arcade projects. Very durable and extremely nice to use. These have held up a lot better than the Happ Ultimates I was using before, and believe me they've been put through hell and back as far as use is concerned.
