Buriki One: Grappling System?

Okay, I'm really getting frustrated here. I've had Buriki One for a month or so now and am absolutely loving the game... except for one thing. I can not figure out the grappling system!!

What I am really trying to figure out is exactly how to break out of a throw, how to counter them, and how exactly to get a character to submit.

Here is what I have figured out so far:
When you are about to be thrown, your balance bar will flash white. If you tap the forward and back buttons as well as shake the joystick, you can sometimes break out of the throw and in which case the balance bar will flash red instead of white.

Sometimes, when I do the same button mashing method, my character will go into a counter, but I can't figure out what I'm doing differently.

Also, I found that it's easier to break out of a throw when your balance meter is full. When it's empty, it's much harder (although you still can break out of a throw.

Another thing that I noticed is that when you are being thrown, you seem to have a certain amount of control over your balance meter. So my theory was that you had to keep the center arrow/marker on the balance meter as close to the center as possible. If the center arrow/marker falls completely to one side, then you lose your balance and get thrown... but I can't figure out how exactly to control the balance meter.

My other theory was that the balance meter was just there to show you your current status, but that you had no control over it. Instead you must press a certain button or direction at the right time to break out of the throw (similier to the Tobal style of grappling).

My other question was how do the lock-up/submission moves work? I know that if you are the one performing the lock, you must hold the direction shown on the screen (with the second system) and let go when it shows the neutral direction. The better your timing, the more damage you do. If you are the one being attacked with a submisison move, you can tap and shake the joystick to make the timing of your opponents direction holds more frantic and difficult.

But what do the "offense/defense" bars do at the bottom when you are locked up with an opponent? I know that they decrease as you continue to try to submit the opponent, but when exactly does the opponent give up? When their bar is depleted? And also, do the balance bars become the "offense/defense" bars? So that if you had a depleted balance bar, would you become easier to submit?

So can anyone shed some light on these questions? I love this game, but just wish that I understood it more. If anyone can offer any comments, suggestions, answers, or even more questions, they would be greatly appreciated.
