Well personally, i like them equally -
The dreamcast version looks sharper but this is due to the fact the xbox version is anti-analised like crazy giving it a smoother look. Night - Time lighting effects however look a lot better on the xbox version, the light now 'bounces' of the characters very convincingly.
The Xbox version allows you to take photographs at any time buy hitting the (black) button. This is a really cool feature and ou can take some awesome pics of you kicking ass. Also, their are secrets that can be unlocked with the camera option. In the 'snap shots' from the main menu, press 'X' until you come across a 'secret' page. If you take a photograph of everyone featured ont he secret pages, you will unlock cool stuff like the official Shenmue comic books and concept art.
The xbox one also has a camera filter which all have different effects, from grayscale to full colour to motion blur. Pretty cool.
As you know the DC one has the original jap voices, whilst the xbox one has English Dubs. Personally i had no problem with either, they were both done very well in my opinion.
You can't go wrong with either version but if your looking for replay value the xbox version has the edge. The photograph secrets will take a lot of time to unlock, and it's convenient to just pop the disc in and have all the options avaliable on 1 disc,like the shenmue collection to replay some of the arcade games/fights and the like.
