Concerning ports of arcade games

Most games I buy are arcade pcb's. Most of the time, I buy old games (around 92-94). I have been doing some research, and I found a bunch of games that I would like to buy from the 96-97 era. I don't own any system newer than an SNES, so picking the original arcade version over a port to the SNES is an easy decision. However, there were a lot of arcade games released for the sega saturn and psx (we're talkin 3d as well as 2d arcade games here... keep that in mind). How well do these consoles handle the ports? Gameplay wise (control), graphically, and in terms of load time (usually doesn't bother me, but you never know if you stumble onto a last blade 2 incident)? I really love using my super nova joysticks more than any other controller... do the psx controllers suck for these types of games (mostly shooters and fighters)? The prices for the pcb's I'm looking to buy are around 100-130$, and the ports are 40-70$. Does that play a factor?

Edit: I'd have to spring for a modified saturn/psx if I bought the ports, so add 15$ to the price it would cost me per each port... bumping it to 55$-85$. Buying the extra consoles wouldn't really take up more space compared to having a bunch of pcb's.
