In the advent that I need extra wires for a project is there a type and/or brand that people recommend?

Depends on the usage, power requirements, what its attaching to, etc. If you need really fine, use kynar. I have gotten away with IDE cable wire for lots of things too. Otherwise generic 22AWG works too.

22-24 gauge is good for all-purpose stuff, easy to work with but not too fragile.
