how do i change a us aes to a jap one ?

Well since the hardware is pretty much identical to MVS hardware you would have to change the Bios to either a Japanese Bios or to something like the Universal bios that lets you select the region you want. So the Universal Bios would really be the way to go since it has lots of extra goodies like the built in cheat engine.
The bios determines the language that is displayed when read from the cart no matter where the cart is from origionally. and for that you just have to love SNK ! no regional lockout rules !
