Was there an official S-Video cable for the AES?

No because the chroma and luma signals don't exist from the AV connector.

Any AES S-video cable you see is converting composite to S-video which looks worse than the composite.

Or is composite video the best you can get out of an unmodded AES console?
The best video you can get out of an unmodded AES is RGB (using an RGB SCART cable). RGB is better than component (yuv) and s-video.
The XNEO-1 is one of the converters you can get for RGB to s-video (the s-video is high quality, as it is converted from RGB, not composite). You can also get converters on ebay for converting RGB SCART to component. I use a European-wired RGB SCART cable from a UK ebay seller, as my converter is made in Europe.
As far as the outputs from an unmodded AES, they go from best to worst like this:

RGB (SCART)
Composite (RCA)
RF (using the official SNK RF converter)

Honestly I'd love to see some comparison between a SCART (using or not using a component conversion box, doesn't matter) vs. a system modded with component output.

I saw something like that for the Sega Genesis awhile back and the modded component output was much much better, the SCART signal had washed out colors and such iirc.

Is anyone here able to do this?

Regarding the washed out colours on the mega drive/genesis, it's quite possible that the scart cable that was used wasn't RGB, but plain old composite. My first scart for mega drive was not rgb and it looked almost as bad as if it was RF. When I finally got a real RGB-scart the picture was great.

I don't know it's been awhile, it almost had to have been a proper SCART cable though because I do recall in the pictures the general definition of the graphics was very very crisp.

You are talking about comparing a component modded system (which would have direct RGB (apart from the component converter PCB) to an unmodded AES using a SCART cable and a component conversion box. The unmodded AES still has it's converter inside it (the one that converts the signal to composite and RGB). That is why the component out will be clearer and sharper on the modded system, as the component converter (eg Neobitz) will have less of a degrading effect than the stock RGB/composite converter. Colors from a SCART signal (converted to component) will never have the washed out (and slightly dirty-looking) colors that a composite signal has.

My unmodded AES outputs a very good picture via a RGB SCART lead to my TV. I've compared the image with my MVS board's output and it's pretty close.

The composite video output of my AES is really weak in comparison.
