Well im confused, i just bought a galaga pcb and i was going to put it in one of my jamma cabs via a machine made JAMMA Adapter http://www.jammaboards.com/store/galaga-to-jamma-adapter/prod_224.html

but while reading up on how to make one i ran across a problem, it says "you need to convert your AC powered board into the DC switching power supply voltages required for JAMMA cabinets. If you want to convert an AC powered PCB to JAMMA you will need to make the necessary modifications to the power input."
Now it doesnt say i need to do anything like this on the sight that sells the machine made JAMMA Adapters.

this is what it says to do to my board to get it to work, but theres no pictures so it doesnt make any sense. http://www.arcades.plus.com/galjamm2.htm

And this is the easy way but it says "It leaves all of the components that will no longer be used on the PCB, and may actually damage them, preventing it from being converted back to AC should the need arise." http://www.arcades.plus.com/galjamm1.htm

What should i do?

From what I see on those links, the Galaga PCB need 7volts. An Arcade power supply provides 5V, -5V and 12V lines. Some have ways to change that, but that doesn't seem to be the way to go at all.

from the looks of the machine made Jamma adapter, it has a molex connector. It should be for providing those 7Volts, but Jammaboards usually provides documents that describe that kind of thing. I'd look at those docs first.

The other links seem to provide mods to convert the board, if I were you I would try not to alter the board and provide all the necessary lines from other sources.

So far i have only dealt with building my own System-16 to JAMMA, didn't know that galaga needed 7V.. wow.

It may be an old game, but it's quite the beast. I would actually go for the board mod, if you ever need to undo it, the board itself can always be repaired.

Not to muddy the waters even further, but which game did you buy? Galaga or Galaxian? Galaxian requires an AC power supply. Galaga does not. It looks like Galaga only requires +12 and +5 VDC.

The Galaga to JAMMA converters are pretty straight forward. They just re-map the pins to JAMMA as required and provide two harnesses. One to plug directly into the galaga board to supply power and one to plug into the video board since the video output is not passed from the edge connector.

Assuming you have a real Galaga board and not some bootleg/clone here are some links to resources:

FYI with a standard switching supply +7 VDC would be easy to get with a +12 VDC and -5VDC line. But Galaxian appears to require 7VAC and 12VAC which is something completely different.
