If you want to just replace the joystick gate (so the joystick "sticks" like a Sanwa), you can follow this very easy mod here:

If, however you want an actual Sanwa joystick in there, microswitches, assembly and all, it's going to be much harder, if not impossible. See, the VF5 stick has these odd joystick mounting holes (similar to the one used on the US Tekken 5 stick, from the look of it) that does not line up with the mounting holes on a Sanwa. They are too close and actually not even aligned square. The only solution is to either grind it off and reaffix a compatible mounting plate to the CP, or to tack weld a compatible mounting plate to the existing mounting plate.
This is a hassle, but possible on the US Tekken 5 because there is a lot of space between the CP and the bottom of the stick (so if you add an extra inch or so in mounting panel parts, it'll be fine). The VF5 stick, on the other hand, is very compact, with almost no space between the stick and the joystick it comes stock with. Adding a "fatter" joystick (like a sanwa) might not even fit, much less if you have to add on mounting parts. I haven't checked the exact clearance in the case, but it doesn't really look good.
Anyway, those are my two cents. I'm currently working on my friend's US Tekken 5. Hopefully it will turn out well.

You are wrong about the Tekken stick...you see the mounting plate they use actually lines up with the sanwa sticks just fine, all you have to do is take the meatl plate of the sanwa sticks and in them you'll see a set of holes that line up with the 2 holes in the tekken stick bracket, then all you have to do is drill 2 small holes in the sanwa actuator plates which btw have already holes in them, but are not completely hollow. This is hard to explain, but once you see it for yourself it will make sense.
The DOA trick was kind of neat though.
