Can this be done? Putting an Atomiswave board in an old Neo Geo MVS cab?

Yes, it is perfectly possible.
Set the DIP Switches to Low Res (15khz) and configure the controls to match your Control Panel Layout.

It will work just fine! The select will be the 5th button.

I had mine in my Aero cab and it worked flawlessly in low res mode.

better pick up a stereo plug to wire it into the mvs speakers or put in a switch to make the cab 2 speaker mono.
