Off the top of my head...

Gundam Side Story 1-3 There are actually three games in this Gundam FPS series, but your score and stats are saved all the way through, so it plays more like one big game on three discs.

Vampire Saviour Beautiful port of a beautiful game.

Crows Fun little beat 'em up. The comic this game is based on is also very cool.

Tomb Raider The series actually started on the Saturn before moving to PC.

DOA Best graphics on the Saturn.

Fighting Vipers The Japanese version has 'Pepsiman' as a secret character. This guy alone makes this game worth having.
