Depending on the cut and the resteraunt, medium-medium rare.

I was at chilis a while back and they wouldnt give me a medium rare steak. Said it had to be medium. I was like fine fuck it. Damn thing was burnt and white all the way through.

A lot of places cook it one level more done than you ask by default it seems, I've found medium to usually be the ideal.
